This is a wonderful soup. It's quick to make, healthy, and delicious! Put this in the crockpot and you will have a tasty dinner ready later in the day. The red lentils will turn a yellow color as they cook. Adjust the cayenne pepper to satisfy your own tastes. Personally I only put around 1/4 teaspoon of it in there, so that the kids will still eat it.
Recipe for Red Lentil Soup in the Crockpot
2 cups of red lentils
1 small onion, chopped
1.5 teaspoons of ginger
2 cloves garlic, minced
6 cups vegetable broth
3 tablespoons of lemon juice (or juice of one lemon)
1/2 teaspoon paprika
1 teaspoon cayenne pepper (adjust to your taste)
1/2 teaspoon of salt
First, soften the onion and garlic in a pan on the stove. Rinse and sort through the lentils. Put all the ingredients into the crockpot. Cook it for 6-7 hours on low. Salt more, if needed, to taste.
