I'm a Michigan native and in the Upper Peninsula a lot of people eat "pasties." They are staples in Michigan's Upper Peninsula. Well this morning I grabbed Robin Robertson's cookbook "1,000 Vegan Recipes" so that I can find a new recipe to try, hoping to find something that I had all the ingredients on hand for.
I must disclose right off that I love this book. It is loaded with so many good recipes! If you were to buy only one vegan cookbook for your home, this would be the one I would recommend. However, like most people, I can't stick to just one. I have two shelves full of them. But Robin Robertson ones are my favorites and I have quite a few of hers.
Anyway, one of the first recipes I flipped to was for the "lentil walnut pasties." It immediately sounded good! I read the ingredient list. Check! I have it all on hand. Sweet! That's what I planned to make for dinner. The time came and I followed the directions, making the lentils, filling, and dough, then putting it all together to go in the oven.
Delicous! We all loved them. The pasties have a wonderful flavor and they are hearty and filling because of the lentils. My husband is a big gravy guy, so I made some brown gravy to go over the top of the pasties. The rest of us just picked them up and ate them. Two thumbs way up for the lentil walnut pasties. We will certainly be having these again!
