What you will need to prepare vegan stuffed shells is:
- box of vegan stuffed shells pasta
- one container of extra firm tofu
- one cup of chopped spinach
- 1 clove chopped garlic
- dash of salt
- 1 tbsp of lemon juice
1/4 cup vegan milk
shredded vegan cheese
marinara sauce (store bought or homemade)
1 cup shredded zucchini (optional, but tastes great)
Cook the shells according to the package. Meanwhile, in a large bowl crumble the tofu and then add the spinach, garlic, salt, lemon juice, and milk, as well as zucchini, if you are using it. Combine. Scoop the mixture into the shells and put them in the pan, seem side up. Fit as many as you can snugly into the baking pan (11x13). Top them all with the sauce and then the shredded cheese. Bake in a 400 degree oven for around 20-25 minutes to heat through. Enjoy!
We always have some left over. They freeze well and they are good re-heated after being in the fridge as well. This dish goes well with some vegan garlic bread, salad, and fruit.
