Just in time for summer - vegan macaroni salad! It's great for summer gatherings
and backyard BBQ's. Macaroni salad reciples vary quite a bit, but here's the one that I've been using for a while and we love it:
Vegan Macaroni Salad
12 ounces cooked elbow macaroni (I use whole wheat)
1 stalk celery, chopped
1/2 medium onion, chopped
1/2 cup frozen peas
1/2 cup vegan mayo
1/4 cup vinegar
1 tsp sea salt
Combine the ingredients in a large mixing bowl. Chill a couple of hours before serving. Give it a quick stir before dishing it up. Enjoy!
This is a simple tasty recipe that can be prepared ahead of time. This recipe makes a pretty big bowl of it and can probably serve around six people as a side dish.
