Tonight with dinner I made some fresh organic artichokes I had picked up a few days ago. If you are new to making artichokes, don't worry! They are easy to prepare and make a tasty and healthy addition to any meal.
After preparing mine (wash, trim one inch off the top, use scissors to cut pointy ends off of leaves, rub exposed ends with lemon), I steamed them in a pot (you can also cook them in a slow cooker). The pot had a couple of inches of water and the artichokes were in a steamer basket. In the water I had a little bit of garlic and a couple of bay leaves. Once the water is boiling, put a lid on the pan and let them simmer.
The artichokes will need to steam on simmer for about 45-50 minutes. Once done, serve with some dipping sauce. I whipped together some vegan dipping sauce within minutes, by mixing together some vegan mayo, mustard, lemon juice, and parsley. Even my daughter loved eating these.
