Tonight I made yet another recipe out of Robin Robertsons "1,000 Vegan Recipes"
book. For dinner I made the country fried tofu with golden gravy recipe and served it up with slow baked apples (from her vegetarian slow cooker book) and corn.
The recipe was easy to follow and all came together quite nicely. I really liked the taste a lot. The gravy is great! And with it being made out of chickpeas you don't have to feel guilty pouring it on.
Next time I would make more tofu though. There was at least a cup or more of gravy left over (even with us using it liberally), and my husband was wanting more tofu. So next time I'd keep everything the same, but make about another half a pound more of tofu.
Very good dish! This book has quickly become one of my favorites. I have made so many dishes out of this book and still have so many more to go!
