Tonight for dinner I made the "my kinda meatloaf" in Robin Robertson's cookbook "1,000 Vegan Recipes." To go along with it, I made mashed potatoes and her recipe in the same book for mushroom gravy (the she recommends serving with it).
The recipe was easy to follow. I must admit that when I went to put it into the pan I was a bit skeptical about how it would taste. However, we liked it! My husband and I thought it was really good and we would eat it again. My son also liked it, although my daughter was not a fan. The mushroom gravy was very good as well.
Preparing this dish I actually felt like I was making a special holiday meal. I think you could easily make this loaf your centerpiece for a holiday or special dinner. Yet another tasty vegan recipe from this great vegan cookbook!
