Vegan BLT's (VBLT) are so easy to make and so tasty! We have one every couple of weeks and I make them using tempeh fakin' "bacon," usually the Lightlife brand. It's vegan, organic and has a nice smoky flavor. You can use it for a variety of dishes, including crumbling it on salads, in potato salad, or using it in other recipes.
Most well-stocked health food stores should carry the strips and they are found in the cold section. There are other varieties of veggie "bacon" that you can try, although you will have to check to see which ones are vegan, as not all are.
To make a VBLT start with by using organic whole wheat bread and toast it. Cook the tempeh strips a couple of minutes on each side while the bread is toasting. Then take the toast and top it with a little bit of vegan mayo (I use Grape Seed Oil Vegenaise), tomato and lettuce. After cooking the tempeh strips, add them to the bread and top it with the other slice of toast. Cut it in half and you have a great breakfast or lunch sandwich that both kids and adults love! Enjoy!
